About My Journey

I'm Nikki, and I have been living the low carb lifestyle since March of 2014. I have lost 50 pounds! Many of my family and friends have requested that I share tips, and information on how I lost the weight so I decided to create this blog! The picture below is a compariso I just made to share on social media. The left is me March 1, 2014, and the second is me exactly one year later, and 50 pounds lighter!



To dig into my past a little I have provided more information than you probably asked for. I think it's important to understand why I made this change, and the many ways that it has impacted my life. So let's start a few years back....


This is a picture of me in high school. I'm on the right. I was 160 pounds, and full of muscle. I played 3 sports pretty much all year round, and ate whatever I wanted. I remember feeling fat, and not eating lunch because I was afraid of gaining weight. All of my friends were size 00 or 2, and I was wearing a size 10. Honestly I looked great, but like most girls at this time I had some serious body issues.

Along come the college years, and I started to deal with stress, drinking, and learning to prepare my own food. Also, I ended up not working out or playing sports like I planned. I gained 40 pounds in college over the 4 years. Hitting 200 pounds on the scale was the worst feeling ever, but it was so hard to find a way to change. I tried all kind of diets. Medifast, Weight Watchers, "eating healthy", but nothing worked.

After college I went straight into the real world with a job at a big company, my own apartment, and a new life on my own. This left me feeling scared, and alone. I tried to "eat healthy" but that wasn't working. I worked out, but that only left me feeling hungrier. My definition of eating healthy was eating whole grain bread, whole grain rice, quinoa, and other carbohydrates that I thought were helping me feel better.

The "ah ha" moment came when I walked into my Dr.'s office for an appointment about my chronic sinus infections. My Dr. asked if I had any more concerns, and I broke down and asked about what to do with my weight. He asked what I was eating. I told him oatmeal for breakfast, a sandwich with whole grain bread for lunch, and spaghetti with whole grain noodles for dinner. He mentioned that low carb might be a good option for me. He said that cutting the carbs out of my life, and quitting the sugar would help me lose weight. I decided to take a chance.

I lost 20 pounds the first month, 30 pounds after 3 months, 40 pounds after 6 months, and 50 pounds after 10 months. I cheat on the weekends every once in awhile, but I always go back to low carb when Monday comes around. I know how to maintain my weight now, and how to lose more if I choose to. I am in control of my life, and I have never felt better!


I'm now in the process of working on losing the last 15 pounds, and toning up for my wedding on October 10, 2015. So cheers to this journey, and thank you for joining me!

I hope this blog inspires many more people to start the bacon munching, veggie dipping, and heavy whipping cream drinking lifestyle that I call my life.
